Banana Zucchini Muffins
📝 Ingredients
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 2 ripe bananas, mashed
- cup shortening
- 2 eggs
- 1 3/4 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup sugar
- 1/2 cup chopped walnuts (optional)
- 1 cup grated zucchini
👨🍳 Instructions
- Preheat oven at 350 degrees.
- Cream together shortening and sugar.
- Add eggs and beat well.
- Sift together dray ingredients
- Add to creamed mixture alternating with bananas and zucchini stirring well after each addition.
- Stir in nuts.
- Pour in to well greased 9"x5"x3" loaf pan or muffin pan.
- Bake for 45-50 minutes for loaf or 30-35 minutes for muffins.
- Let cool on wire rack.
