Zomppa's Blueberry Muffins
📝 Ingredients
- 1 1/2 cups – ½ of all purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 1/2 cups of blueberries
- 1 cup buttermilk
- 2 tablespoons canola oil
- 2 eggs, beaten
- 1 teaspoon of lemon zest
- 1 teaspoon salt
- 3/4 cup sugar
- 1 teaspoon vanilla
- 1 1/2 cups whole wheat pastry flour
👨🍳 Instructions
- Pre-heat oven to 400 degrees.
- Sift the pastry flour, all-purpose flour, lemon zest, baking powder, baking soda, sugar and salt.
- In a large bowl, beat 2 eggs.
- Stir in buttermilk, vanilla and oil.
- Add the flour mixture and mix until just combined.
- Add 1 cup of blueberries, gently.
- Using an ice cream scoop, fill 18 muffin tins.
- Add additional cup of muffins to the top of the muffins.
- Bake for 25-30 minutes.
- Cool for 5 minutes. Serve and enjoy!
